The secret to great zucchini is picking it at the right moment — and we do, every time. Our Dunja organic zucchini is harvested young, before the skin gets tough and the flesh gets watery. At that stage the flavor is nutty and clean, the texture holds up to heat without going mushy, and the skin is tender enough to eat without a second thought. We grow them in Dutch buckets in our greenhouse, which lets us harvest on our schedule rather than the weather's. Roast them whole, slice them thin for pasta, or throw them on the grill — they perform.
